Do we need an excuse to go out and taste locally-made pastries. We could come up with one or two, but the end result is the same: Here's a mouthwatering round up of some relatively new bakeries (plus one coming soon) for you to savor. The treats range from a traditional French baguette to a "cookie crust shell cradling a layer of raspberry, then almond cake topped with sliced almonds, an apricot glaze and a half-moon of pearly rose-colored raspberry fondant. When Michelle Cunningham moved to Vermont in 2008, she was struck by the prevalence and array of local food that was available. "You could get everything under the sun local," Cunningham, 35, said. "But doughnuts. You can get local kimchi, but not doughnuts. Where are the doughnuts, wondered Cunningham, who worked in pharmaceutical sales for veterinary medicine. She teamed up with a friend who attended the Culinary Institute of America, Lauren Deitsch, and together they started a doughnut business in the winter of 2014, Doughnut Dilemma. They made doughnuts out of Cunningham's house in South Burlington, and sold them at the Burlington Farmers Market. "It just exploded," Cunningham said. Cunningham, owner of the Doughnut Dilemma, would start frying doughnuts, four at a time, at about 1 a. m. Saturday, some six-and-a-half hours before arriving at the farmers market to set up. "We'd come home and clean," Cunningham said. The first week of the farmers market, the 400 doughnuts sold out by 11:30 in the morning. The next week, 500 doughnuts sold out fast, then 600, according to Cunningham. "We could've sold more," Cunningham said. Doughnut Dilemma's capacity to make doughnuts will soon increase, as Cunningham plans to open a storefront bakery and café in early May on Main Street in Burlington. She expects to produce 700 to 1,000 doughnuts a day in a dozen or so varieties. (Deitsch, no longer with the Doughnut Dilemma, is research and development specialist at Lake Champlain Chocolates. The doughnut and coffee shop is to open at 55 Main St. , site of the former Big Fatty's BBQ. Eventually, Cunningham — who grew up in southern Illinois — will add frozen custard and funnel cakes to the menu. "I'm bringing my Midwesterness here," she said, describing funnel cakes as similar to fried dough, "only better. Doughnut Dilemma will be open 6:30 a. m. to 3 p. m. Tuesday through Friday. It will be open 7 a. m. to 3 p. m. Saturdays, but probably not the first week or two of the farmers market, which starts May 9. "We're going to be closed on Mondays," Cunningham said. Several years ago, when Lisa Curtis opened her first bakery in the Mad River Valley the self-trained baker was asked why she got into the business. "Bakeries make people happy," she responded. In January, Curtis spread the happiness by opening a second bakery in a storefront that had been empty for several years after Richmond Beverage moved into the Richmond Market. Curtis sells baked goods to them and they sell ice cream to her, so both locations now offer both fresh-baked and fresh-churned treats. One of the draws of Richmond, Curtis said, was its proximity to her own home in Huntington: "This is my town. It was a natural fit for me. ". Coincidentally, she adds, the two bakeries are each located at 40 Bridge Street in their respective towns. The new location's bigger kitchen has allowed Curtis to build her team and expand her menu in the nicely renovated space with narrow-planked wood floors, exposed brick and moss green walls. A full line of croissant dough pastries include addictive cinnamon-sugar-drenched morning buns and almond croissants, which local customer Patti Rossi calls "the real deal. She and her husband, Victor — a fan of the cinnamon pecan coffee cake — walk or bike down to the bakery regularly, they said, to enjoy a coffee and morning pastry. Breakfast sandwiches on house-made English muffins come in bacon, vegetarian and Taylor pork roll versions, a treasured taste memory for those like Curtis who grew up in New Jersey or Pennsylvania.
