Curran’s Pastries, Chais & Tea Near the corner of Benton Avenue and South San Francisco Street, across the street from Flagstaff Climbing Center’s parking lot. However, you can find him serving tea at the Flagstaff Farmers’ Market Sunday mornings. Tucked into its tiny storefront on Benton Avenue, Curran’s Pastries, Chai and Teas provides a quiet cozy spot to duck out of the bustle of everyday life and sip a cup of tea. Tea and chai are a family tradition and business for Curran Malhotra. Malhotra’s father is from northern India, where tea or chai, a spiced blend of black tea and herbs, is a daily beverage. “Visitors to our house would bring a pound of tea with them,” he said. Malhotra got interested in tea after going on a tasting tour in India. A few years later, he and his brother opened Vermont Tea and Trading Co. in Middlebury, Vermont. Malhotra eventually moved to San Francisco, where he became good friends with a couple visiting from Flagstaff. “It reminded me so much of Burlington, Vermont,” he said. Malhotra opened Curran’s in February. The shop carries 10 different types of homemade chai and more than 40 loose leaf teas from China, Japan, India and Sir Lanka. He also carries an assortment of goodies from High Mountain Cookies and tea accessories, such as English tea pots, infusers and small gift items. “I’ve had my eye on this spot for a while,” he said. “I wanted a quiet, comfortable spot where I could provide a high-quality product, but at a good value. All of the teas are hand-blended or purchased by his brother’s company. He and his brother taste every tea they sell. A quality tea will have a good looking leaf to it and it should be dry -- but not too dry. To make the best pot of tea, Malhotra recommends bringing a pot of fresh, filtered water to a boil and filling a teapot with the hot water to preheat the teapot. Dump out the water and put about a teaspoon of tea per cup in the empty teapot. Refill the pot with more hot water. Let the tea steep for about five to six minutes before pouring. Different kinds of tea prefer different temperatures, he said. Black tea and Oolong tea like water that is as hot as possible, around 200 degrees. Because of Flagstaff’s altitude, it can be difficult to get the water hot enough for black tea, he said. Malhotra will sometimes add a bit more tea to a pot if he is making black tea. Green tea and white tea is best steeped with water that is 170 to 180 degrees, he said. All tea comes from the same plant. The different colors, black, white and green, refer to when the tea is picked and how long it is left to oxidize, Malhotra said. White and green teas are usually picked in the spring and summer and are not left to oxidize for very long. Oolong tea is left to oxidize a bit longer than white or green tea and black tea is completely oxidized. Malhotra sells tea and chia by the cup and the ounce. He brews all of his tea to order and leaves the sweetening up to his customers. Just give him 10 minutes after putting in your order before you come pick it up. He’ll bring it to your car window, if he’s not busy. The shop can seat six to eight people comfortably, which makes it perfect for small weekly meetings and groups, he said. Malhotra always makes a few pots of tea each day to provide samples to customers. He hopes to start formal tea tasting parties in the near future.
